Herp Pier Side Slushie/Berks Combo Cart, 100 W. Hersheypark Dr. Hershey, June 15. Pass. The handwash sink at the Berks Combo cart was temped at 72°F and not 85°F and above as required. Hot water temperature was brought up to 105°F at the time of this inspection and violation was corrected on site.

New China Express, 3877 Union Deposit Rd. Harrisburg, Complaint, June 13. Pass. Female food handler was observed in kitchen, not wearing proper hair restraints, such as hair nets or hat. One box of frozen chicken was being thawed out on the floor in the rear of kitchen area. Frozen items can be thawed out in the refrigerator or with running water in the sinks but not at room temperature nor on the floor. There was an empty food can lying in hand sink which may interfere with usage by food handlers. Hand washing sinks must be accessible and dedicated for hand washing only. Overall condition of restaurant was messy with food debris and dust on equipment and counter tops. Kitchen area has poor lighting. Facility needs to clean out its grease traps. There was a off odor originating from 2 grease traps. Records of clean-out need to be kept for Health Officer to review at each inspection.

New China, 436 E. Main St. Middletown, June 12. Fail. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Observed a whole chicken in a large pot of water left on the wok station from the night before and was not going to be discarded. Observed numerous foods in numerous cooling/baine marie cooling units stored open with no covering. Arrived for inspection at opening and foods were stored open overnight. Observed a large bus tub of raw chicken stored uncovered and stored directly on the floor in the walk-in cooler. Observed several raw animal foods (chicken, seafood, beef) were stored above ready to eat foods in the walk-in cooler. Some, not all, food ingredient storage containers/shakers/bottles, in the entire facility, are not labeled with the common name of the food. Three containers of food utensils in the kitchen area (two at the first prep table to the left and one next to the rice cooker) observed stored in a container of water which is not maintained at 135°F. Observed two wet wiping cloths on two prep tables, not being stored in sanitizer solution and left on the tables from the night before. Observed a bus tub of raw chicken stored directly on the floor in walk-in cooler area, rather than 6 inches off of the floor as required. Observed a large bag of onions stored directly on the floor at the dry storage area. Observed numerous food items (commercially processed and food prepared in the food facility) in the walk-in cooler, baine marie cooling units and upright cooling units, and being held for more than 24 hours, is not dated marked with the date it was opened or made. Temperature measuring device for ensuring proper temperature of equipment is not available or readily accessible in most, not all, of the cooling and freezing equipment. Loose/deteriorated rubber door gaskets observed on the Avantco two door baine marie cooling unit and the small single door baine marie cooling unit (no name of unit displayed). Observed the handle on the two door Summit freezer unit, in front of the cashier area, is broken and in need of repair/replacement. Observed condensor, in the walk-in cooler, leaking into a large tub stored on the top shelf to collect condensation. Unit is in need of repair/replacement. Observed the following on food contact surfaces: An ice scoop stored directly on top of bagged ice in the small chest freezer. A manual can opener with dried food debris on the blade area. Observed employee trying to rinse the manual can opener off instead of wash-rinse and sanitize, as required. Numerous utensils were stored dirty directly on the dirty wok station area. Hanging knife holder on the wall at the back area of the kitchen with accumulation of food debris coming in contact with knives stored. Spice containers at the wok station are not being changed out daily, as evidenced by a dry build-up of spices on the interior. A large tub of salt/peper mixture with heavy accumulation of dried build-up on the interior of the container indicating that plastic container is never washed and just refilled continuously. Observed two dirty/used paper towels stored directly on two prep tables in the kitchen area, from the night before. Food containers for cold and ambient temperature food ingredient and foods are not being changed out daily to prevent contamination. Two gray divider tubs with to go containers stored inside, have an accumulation of food debris on the interior of the dividers coming in contact with the to go containers stored. A large cleaver and two sets of tongs stored on the counter near the fryer area with accumulation of food debris from the night before. Clean utensils were stored in a dirty pot, near the hand-wash sink area, coming in contact with contamination. A large lid stored directly on the wall, coming in contact with a non-clean wall surface and contaminating lid stored. A large pot stored next to the hand-wash sink with splash and soap from dispenser coming in contact with large pot. Scoops are not being removed to be cleaned daily in all dry ingredient storage containers in the cook/prep area and the dry storage area. Observed the following on non-food contact surfaces: Interior bottom of Maytag single door upright freezer at the customer/cashier counter with accumulation of dried food debris and in need of cleaning. Handles on all equipment with accumulation of dried food debris. Including cooling/freezing units, Amana microwave, walk-in units, etc. Exteriors of squirt bottles at the wok station with accumulation of food debris and not clean to sight or touch. Observed single-service, single-use articles stored above the rice cooker area which were not in the original protective package or inverted to protect against contamination. Unwrapped and unprotected single use straws stored in the customer area. Self closing equipment on both the men's and women's restroom doors was observed not fully operational and in need of repair or replacement. Rear door located in the dry storage area of the food facility has a gap/holes and is rusted and does not protect against the entry of insects, rodents, and other animals. Screen door, in the same location, has a gap at the top of the door and does not protect against the entry of insects, rodents and other animals. Observed two mops are not being hung to air dry.
